Monday Menu Plan and Struggles with Breakfast Ideas

 I miss eggs! Like I really do. I have been buying the occasional dozen so that I have eggs for recipes like pancakes, but we haven't just been eating them. But this weekend, I am so making us some eggs, haha. I'm going to be as frugal as I can with them, so instead of frying each person their own eggs, I am making scrambled eggs with cheese. That saves me a couple of eggs and adding cheese and seasoning makes it feel special. I have to say it is crazy to be thinking of eggs as a special meal, but here we are!

 I am really struggling with traditional breakfast ideas. Eggs, bacon and sausage are all expensive, so I am trying to think outside the box. The grilled cheese sandwiches for breakfast were a hit, so this week I am frying up bologna to have with toast and I anticipate it will go down fine too. It's funny how hard it is to break from what is traditional. Drastic times call for drastic measures though, so I'll keep casting about looking for ways to start the day as economically and easily as possible. If you have any ideas, I would love to hear them!

My kids requested pizza quesadillas for lunches this week, and they love them so much, I am just going to make enough for them to have every day. We don't always have to have a ton of variety, and I need to keep reminding myself of that. Especially since growing up, my school lunch everyday without fail was a sandwich, chips and fruit and I am no worse for wear, haha. I am also planning to finish the yogurt we got on sale up this week. One foot in front of the other, right!

Monday-

  • Breakfast- Leftover pancakes, banana
  • Lunch-  Sandwiches, crackers, apple
  • Dinner- Spaghetti and Simple Spaghetti Sauce, green beans, garlic toast- Double batch of sauce to use for pizza quesadillas

Tuesday-

Wednesday-

  • Breakfast- Peanut butter and chocolate chip oatmeal, yogurt
  • Lunch-  Pizza quesadillas, carrots and celery sticks
  •  Dinner- Chicken noodle soup with homemade noodles and some leftover chicken, bread and butter

Thursday-

Friday-

  • Breakfast- PB and chocolate chip oatmeal, yogurt
  • Lunch- Pizza quesadillas, carrots and celery sticks
  • Dinner- Sloppy Joes with 1/2 ground beef 1/2 lentils, roasted potatoes, green beans- save some sloppy joe for tomorrow

Saturday-
