Monday Meal Planning and Summer Lunches for Kids

 As the school year comes to a close, I once again am starting to think about adding in lunches for the kids. Usually they eat the school provided lunch during the year, so not something I have to think too hard about. I plan lunches for my husband and I and anyone who would rather pack that day. As a kid we pretty much ate sandwiches every day of the summer, or leftovers warmed up in the microwave. I have spoiled my family a little bit by not requiring that amount of repetition, but with my new job added to my schedule, simplicity is going to have to reign supreme. I would love to hear your ideas for lunches I could prep at the beginning of the week and that maybe the kids could assemble their own. Like having different kinds of sandwich fixings so that there are choices within the sameness. 

A few of ideas I have had so far:

  • Assortment of lunch meat for sandwiches or wraps (probably the most expensive option)
  • Cut up vegetables for sides or salads
  • Big batch of pasta salad
  • Boiled eggs by the dozen
  • #10 cans of fruit opened at the beginning of the week

Monday-

  • Breakfast- Leftover pancakes,apple
  • Lunch- sandwiches, crackers, canned peaches
  • Dinner- Chili, peanut butter sandwiches

Tuesday-

Wednesday-

  • Breakfast- Cinnamon toast, banana
  • Lunch-  sandwiches, crackers, carrots and celery sticks
  •  Dinner- Chili mac, peas, garlic toast

Thursday-

Friday-

  • Breakfast-  Cinnamon and raisin oatmeal, banana
  • Lunch-  Leftovers, bread and butter
  • Dinner-  Four Layer Burrito using canned tomatoes with green chilies instead of salsa, salad (cook enough rice for the weekend too)

Saturday-

  • Breakfast- Bagels, fruit cocktail
  • Lunch- Leftovers, Pasta salad, veggies and dip
  • Dinner- Salsa Chicken rice bowls, corn

Sunday-
