This week I decided to cook a big pot of rice. I am also going to cook a big pot of chili. I plan to use them for several meals this week and to cut down on my dinner prep time. I really need to get back into doing things that make my evenings go smoother and by cooking big batches of something I can speed up dinner for another night. If I am going to cook something anyway, might as well make enough for more than one meal.
During my blog break, I was reminded that my family doesn't mind eating leftovers, especially if I make something new out of them. I don't have to fix or orchestrate 21 separate, unique meals each week, I can plan ahead and reimagine or reheat parts of a big batch cook up. I am embarrassed to admit I kind of forgot about this, insert eye roll here. Are there any meals you can precook to use during the week? I would love it if you shared!
Here is this weeks menu plan
Monday-
- Breakfast- Oatmeal, banana
- Lunch- Kids eat at school, us- sandwiches, pretzels, carrots and celery sticks
- Dinner- One pan chicken and gravy, rice, peas
Tuesday-
- Breakfast-eggs, toast, grapes
- Lunch- Kids eat at school, us- Thai ramen, canned fruit
- Dinner- Fry bread and chili
Wednesday-
- Breakfast- Oatmeal, banana
- Lunch- Kids eat at school, us- Sandwiches, pretzels, carrots and celery
- Dinner- Smoked sausage and dirty rice
Thursday-
- Breakfast- eggs, toast, grapes
- Lunch- Kids eat at school, us- Butter beans and rice, carrots and celery
- Dinner- Chili spaghetti, green beans
Friday-
- Breakfast- Fried bologna sandwiches, canned pears
- Lunch- Kids eat at school, us- leftovers or sandwiches, canned fruit
- Dinner- Salisbury steak, mashed potatoes, peas
Saturday-
- Breakfast- Pancakes, cooked apples
- Lunch- Pizzadillas, whatever fruit we have left
- Dinner- Chili topped microwave baked potatoes, broccoli
Sunday-
- Brunch- Pancakes, frittata
- Dinner- French bread pizzas, veggies and dip
